Absolutely fine. But stay clear of the ‘healthier’ wholewheat, or buckwheat versions. The fiber in the wholewheat version irritates our gut lining, and frankly, it’s better to get your fiber from low-oxalate veggies instead. As I mentioned in the bread post, this is not a gluten free diet (hurrah!), but do eat it in moderation – I find twice a week about right. Any more and I start to feel bloated. A good alternative is corn-based pasta, but try and find one made from non-GM corn. And definitely stay clear of ready made garlicky tomato sauces, they’re the ones that will make you feel unwell, not the pasta!
My favorite ‘sauce’ at the moment is 1/2 a diced avocado, a couple of big slices of chopped up feta cheese, a dribble of extra virgin olive oil, a little spritz of lemon juice and a few capers. Summer in a bowl!
