You’ll be relieved to hear that this is not a gluten-free diet. Yippee! I definitely could not live without bread… buttery crumpets, toast and marmalade on a Saturday morning, sourdough and smashed avocado in the local hip cafe, chunky croutons in my soup… I could go on (seriously). However there are a few groundrules to follow:
- no seedy, high fibre, or brown bread
- ideally no commercial yeast, instead choose naturally leavened sourdough
- the less processed and sugar laden the better (meaning no blueberry bagels, fruit loaf etc)
- stay clear of rye and other black breads
Choose a chunky slice of sourdough with a slick of honey, or a hot white pitta filled with oozy (grass-fed) butter, or even a flaky croissant from your local bakery – bet you didn’t believe this would be my advice! And don’t worry about getting enough fiber in your diet, we’ll get that elsewhere (leafy green veg, some beans/legumes, occasional fruit).
